Apple Cinnamon Pancakes


It's a snowy day here in the Carolina's, expecting a lot of sleet this afternoon. A perfect day for hanging out in our pj's and for some hot Apple Cinnamon Pancakes, yummm! I usually start these out from my basic pancake recipe and adapt it to taste. Here is the basic pancake recipe with adaptations following it:

Combine
1 1/4 c. flour
1 tsp. baking powder

Then combine
1 c. milk (or water)
2 teaspoons oil

Mix wet and dry ingredients together. Makes about 8 pancakes.


Here is the Apple Cinnamon version

Combine
1 1/4 c. buckwheat flour
1 tsp. baking powder

Then combine
1 c. of rice milk
1/2 c. of applesauce

Mix wet and dry ingredients, add several liberal shakes of cinnamon and a dash
of vanilla. Makes about 8 pancakes.

P.S. I like to add a little bit more rice milk to this recipe to "thin" these out some, the buckwheat flour makes for a very thick batter. Delicious!
